  • 20 oz ( 1 ¼ lbs ) boneless, skinless chicken breasts
  • 2 tbsp all-purpose flour
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp sweet paprika
  • ½ tsp salt
  • freshly ground pepper to taste
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 3 garlic cloves, minced
  • 2 tbsp parsley, freshly chopped

Instructions

  • Dry the chicken breasts with a paper towel and cut them into 1-inch pieces.
  • In a bowl, sprinkle the flour, basil, paprika, oregano, salt, and pepper over the chicken. Toss to coat well.
  • Heat a large cast iron skillet over medium-high heat. Add the olive oil and 1 tbsp butter. Once the butter melts, add the chicken pieces in a single layer.
  • Cook the chicken for about 3 minutes without moving it. Flip the chicken and cook for 2 additional minutes.
  • Add the remaining butter, minced garlic, and parsley to the pan. Cook for an extra minute until the chicken is fully cooked through.
  • Serve immediately while hot, alone or with your choice of sides such as rice, pasta, or salad.
