- 2.5–3 cups water

Instructions
- Pat and season the beef with salt and pepper.
- Sear the beef in olive oil until browned.
- Sauté onions until golden and caramelized.
- Add flour to onions and cook briefly.
- Pour in red wine and scrape the pot bottom.
- Add carrots, garlic, and bouquet garni.
- Bring to boil, then lower heat and simmer for 2 to 2.5 hours.
- Adjust consistency with water as needed.
- Finish by removing bouquet garni and taste for seasoning.
