  • Fresh Thyme Leaves (2 teaspoons)
  • Phyllo Dough (8 ounces; about 10 sheets)
  • Brie Cheese (8–12 ounces; 227–340g)
  • Apples (4 small; Honeycrisp recommended)
  • Brown Sugar (2 Tablespoons)
  • Honey (for garnish)
  • Flaky Sea Salt (for garnish)

Instructions

  • Preheat your oven to 350°F (177°C) and prepare a baking sheet with parchment paper.
  • Melt the butter with thyme leaves in a skillet, then pour into a bowl to keep warm.
  • Layer phyllo dough on the baking sheet, brushing each layer with thyme butter.
  • Spread the Brie over the phyllo, leaving a border.
  • Core and slice apples, then toss with brown sugar and arrange on the Brie.
