  • 1 tablespoon melted butter or olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly-ground black pepper

  • 1/2 teaspoon smoked paprika

Instructions

  • In a large bowl, combine 2 cups lukewarm water with 1/4 cup kosher salt until most salt is dissolved.
  • Add 2 cups cold water or ice cubes to cool down the mixture and ensure it's touchably cool.
  • Submerge chicken breasts in the brine for 15 minutes, or refrigerate for up to 6 hours. Rinse with cold water and pat dry afterward.
  • Preheat your oven to 450°F.
  • Arrange the chicken breasts in a single layer in a baking dish. Brush both sides with melted butter or olive oil.
  • In a small bowl, mix the salt, pepper, garlic powder, and paprika. Season the chicken on both sides with the mixture.
  • Bake for 15-18 minutes, checking that the internal temperature reaches 165°F. For a crispy top, broil for the last 3-5 minutes, watching closely.
  • Remove from the oven, transfer to a plate, and tent with foil. Let rest for 5-10 minutes before serving.
