Description

This Beef Burrito boasts irresistible flavor with tender ground beef, hearty black beans, and warm tortillas, making it a perfect choice for a quick and delightful dinner at home.


Ingredients

  • 1 tablespoon canola oil or neutral cooking oil of choice
  • 1 pound lean ground beef
  • 1 ½ teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • ¾ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 small yellow or white onion (¼-inch diced)
  • 1 (15-ounce) can reduced-sodium black beans, rinsed and drained
  • 1 cup prepared salsa
  • 6 burrito-size flour tortillas (about 10 inches)
  • 2 cups (8 ounces) shredded Monterey Jack, sharp cheddar, or Mexican blend cheese
  • Sour cream
  • Avocado
  • Hot sauce
  • Chopped fresh cilantro

Instructions

  1. Heat the oil in a large skillet over medium-high heat and swirl to coat.
  2. Add the ground beef, pressing it to form a large patty, and let it sizzle for 3 to 4 minutes to form a crust.
  3. Sprinkle the seasoning mix of chili powder, oregano, cumin, salt, garlic powder, and smoked paprika over the beef, then add the diced onion.
  4. Break the meat into small pieces and cook, stirring occasionally, until fully cooked for another 4 minutes.
  5. Add black beans and salsa, cooking until the liquid mostly evaporates and beans are warm, about 1 minute. Adjust seasoning if necessary.
  6. To assemble, place a tortilla on a flat surface, sprinkle cheese, and top with a portion of the beef/bean mixture, followed by more cheese.
  7. Fold the tortilla's sides inward, then roll up from the bottom to enclose the filling. Repeat with other tortillas.
  8. Preheat a nonstick skillet over medium heat and brown each burrito seam side down for 1 to 2 minutes until golden brown on both sides.

Notes

For added flavor, customize toppings such as sour cream, avocado, and hot sauce.
Feel free to substitute ground beef with ground turkey or chicken for lighter options.
