- 1 ½ teaspoons chili powder

- ½ teaspoon smoked paprika
- 1 small yellow or white onion (¼-inch diced)
- 1 (15-ounce) can reduced-sodium black beans, rinsed and drained
- 1 cup prepared salsa
- 6 burrito-size flour tortillas (about 10 inches)
- 2 cups (8 ounces) shredded Monterey Jack, sharp cheddar, or Mexican blend cheese
- Sour cream
- Avocado
- Hot sauce
- Chopped fresh cilantro
Instructions
- Heat the oil in a large skillet over medium-high heat and swirl to coat.
- Add the ground beef, pressing it to form a large patty, and let it sizzle for 3 to 4 minutes to form a crust.
- Sprinkle the seasoning mix of chili powder, oregano, cumin, salt, garlic powder, and smoked paprika over the beef, then add the diced onion.
- Break the meat into small pieces and cook, stirring occasionally, until fully cooked for another 4 minutes.
- Add black beans and salsa, cooking until the liquid mostly evaporates and beans are warm, about 1 minute. Adjust seasoning if necessary.
- To assemble, place a tortilla on a flat surface, sprinkle cheese, and top with a portion of the beef/bean mixture, followed by more cheese.
- Fold the tortilla's sides inward, then roll up from the bottom to enclose the filling. Repeat with other tortillas.
- Preheat a nonstick skillet over medium heat and brown each burrito seam side down for 1 to 2 minutes until golden brown on both sides.
Notes
For added flavor, customize toppings such as sour cream, avocado, and hot sauce.
