- 28 ounces frozen steak fries
- 2 tablespoons Cajun seasoning, divided
- 2 boneless skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon extra virgin olive oil
- 1 cup Monterey Jack cheese, shredded
- 1 cup sharp cheddar cheese, shredded
- ¼ cup mayonnaise
- 1 tablespoon sour cream
- 1 tablespoon whole milk
- 1 teaspoon hot sauce, plus more for drizzling
- ½ teaspoon garlic powder
- Chopped chives, for garnish
Instructions
- Preheat oven according to fries package instructions (425°F/220°C). Spread fries on a baking sheet and bake for 20-25 minutes until golden and crispy.
- In a bowl, toss chicken pieces with 1 tablespoon of Cajun seasoning until well-coated.
- Heat olive oil in a skillet over medium heat, add seasoned chicken, and cook for 5-7 minutes until cooked through and browned. Set aside.
- In a bowl, mix mayonnaise, sour cream, hot sauce, remaining Cajun seasoning, garlic powder, and milk. Adjust hot sauce to taste.
- After baking, layer fries with chicken pieces and sprinkle with Monterey Jack and cheddar cheese. Return to the oven for 3-5 minutes until cheese is melted.
- Drizzle the prepared sauce over the loaded fries and garnish with chopped chives. Serve immediately.
Notes
For extra spice, substitute Monterey Jack with Pepper Jack cheese.
Making it vegetarian? Replace chicken with black beans or roasted veggies.
