Instructions
- Preheat your oven to 350 degrees Fahrenheit. Line a muffin tray with parchment paper cupcake liners.
- In a large bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, ginger, and salt using a whisk.
- In a separate bowl, whisk together the eggs, granulated sugar, brown sugar, vegetable oil, applesauce, and grated carrots until well mixed. Pour this mixture into the dry ingredients and stir until just combined.
- Spoon the batter into the cupcake liners, filling them about 3/4 full. Bake for 20 to 25 minutes, or until a toothpick inserted into the center of a cupcake comes out with a few moist crumbs. Rotate the pan halfway through for even baking.
