- 1 cup unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1 cup light brown sugar, packed
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 3/4 teaspoon ground cardamom
- 1/2 teaspoon ground all spice
- 1/2 teaspoon kosher salt
- 3 cups quick oats
- 3 cups powdered sugar
- 2 tablespoons eggnog
- 1 1/2 teaspoons vanilla extract

Instructions
- Preheat oven to 350°F and line baking sheets with parchment paper.
- In a mixer, cream together butter, granulated sugar, and brown sugar until light and fluffy. Mix in eggs and vanilla extract.
- In a separate bowl, whisk together flour, baking soda, spices, salt, and oats.
- Gradually mix the dry ingredients into the wet mixture until well combined.
- Scoop dough onto baking sheets, leaving space between each cookie.
- Bake for 10-12 minutes until edges are golden and centers are soft. Cool on racks.
- For the filling, beat butter until smooth, gradually mix in powdered sugar, eggnog, and vanilla until fluffy.
- Spread filling on half of the cookies and sandwich with another cookie.
Notes
For a gluten-free version, use a gluten-free flour blend.
Make sure butter and eggs are at room temperature for better mixing.
Chill the filling if it’s too soft to make sandwiching easier.
