- 2 teaspoons black pepper
- 2 tablespoons extra virgin olive oil
- 1 pound ground beef
- ½ medium yellow onion
- 1 tablespoon hamburger seasoning
- ½ teaspoon Lawry’s seasoned salt
- ½ cup sour cream
- 2 tablespoons ketchup
- 1 tablespoon red wine vinegar
- 2 teaspoons yellow mustard
- ½ teaspoon paprika
- 8 slices thick-cut bacon
- 1 cup shredded cheddar cheese
- ¾ cup dill pickles
- ½ cup cherry tomatoes
Instructions
- Preheat the oven to 425°F and line a sheet pan.
- Spread cubed potatoes on the pan, drizzle with olive oil, and season with salt and pepper.
- Bake for 45-60 minutes, turning halfway, until crispy.
- In a skillet, cook ground beef and onion over medium heat until browned.
- Mix sour cream, ketchup, vinegar, mustard, and paprika in a bowl for the sauce.
- In a large bowl, combine potatoes, beef, bacon, cheese, pickles, and tomatoes.
- Fold in the sauce until well mixed.
- Serve warm, or chill for later. Garnish with extra toppings as desired.
Notes
For extra crispiness, spread potatoes in a single layer on the baking sheet.
Let cooked beef rest briefly before adding to maintain juices.
