Description

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cornstarch
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1/4 cup granulated sugar (for rolling)

Instructions

  • Preheat the oven to 325°F (163°C) and line baking sheets with parchment paper.
  • In a bowl, whisk together flour, baking soda, cornstarch, cinnamon, and salt. Set aside.
  • In another bowl, combine melted butter and brown sugar until smooth. Mix in egg and vanilla extract.
  • Fold the wet ingredients into the dry mixture until just combined. Avoid overmixing.
  • Chill the dough for 3-4 hours in the refrigerator.
  • Scoop about 1.5 tablespoons of dough, roll into a ball, and coat in granulated sugar.
  • Place the dough balls on the baking sheet, spaced apart. Bake for 14-16 minutes until edges are set and tops have cracks.
  • Let cool on the baking sheet for 10 minutes before transferring to a wire rack.

Notes

Chilling the dough is key for chewy cookies; don’t skip it!
For added flavor, consider mixing in chocolate chips or nuts.
