Instructions
- Preheat the oven to 325°F (163°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, cornstarch, cinnamon, and salt. Set aside.
- In another bowl, combine melted butter and brown sugar until smooth. Mix in egg and vanilla extract.
- Fold the wet ingredients into the dry mixture until just combined. Avoid overmixing.
- Chill the dough for 3-4 hours in the refrigerator.
- Scoop about 1.5 tablespoons of dough, roll into a ball, and coat in granulated sugar.
- Place the dough balls on the baking sheet, spaced apart. Bake for 14-16 minutes until edges are set and tops have cracks.
- Let cool on the baking sheet for 10 minutes before transferring to a wire rack.
