- 1 large head cauliflower , cut into florets
- 2 garlic cloves , minced
- 2.5 tbsp extra virgin olive oil
- 1.5 tsp chipotle powder (more or less for spiciness!)
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1 tbsp lime juice (1 medium to large lime)
- 1 tbsp coriander/cilantro leaves , finely chopped (optional, sub parsley or chives)
Instructions
- Preheat your oven to 200°C/390°F.
- In a large bowl, combine the cauliflower florets with oil and minced garlic, mixing to coat evenly.
- Add chipotle powder, salt, and black pepper, tossing to ensure all pieces are seasoned well.
- Spread the seasoned cauliflower on a baking tray. Bake for 25 minutes, tossing halfway, until the edges are caramelized and the cauliflower is tender.
- Once out of the oven, push the cauliflower together and drizzle fresh lime juice over the top.
- Garnish with finely chopped coriander or parsley if desired, and serve hot.
Notes
Adjust the amount of chipotle powder to suit your spice preference.
For added flavor, consider marinating the cauliflower for 30 minutes before cooking.
Serve this dish alongside grilled meats or as part of a vegetarian spread.
