Description

Ingredients

  • 1/2 cup neutral oil
  • 4 ounces unsweetened chocolate
  • 2 teaspoons pure vanilla extract
  • 4 large eggs

  • 1 cup granulated sugar (for rolling)
  • 1 cup powdered sugar

Instructions

  • Chop and melt the chocolate in a heatproof bowl over simmering water; let cool.
  • In a bowl, mix sugar, oil, melted chocolate, and vanilla until thick; add eggs one at a time, mixing well after each.
  • In another bowl, whisk flour, baking powder, and salt; fold into the chocolate mixture gently.
  • Chill the dough for at least 3 hours or overnight.
  • Preheat oven to 350°F and line baking sheets with parchment.
  • Shape dough into balls, roll in granulated sugar, then coat with powdered sugar.
  • Bake for 10-12 minutes until tops are crackled and centers set, then cool on wire racks.
