- 1 1/3 cup Frozen Raspberries
- 1/4 cup Powdered Sugar
- 1/4 cup Heavy Whipping Cream
- 7 oz Good Quality White Chocolate
- 1 TBSP Water
- 7 oz Dark Chocolate (52% to 70% Cocoa)
- Pink Chocolate or Ruby Chocolate
Instructions
- Defrost frozen raspberries to room temperature.
- Chop white chocolate and set aside in a bowl.
- Blend thawed raspberries until smooth.
- Strain raspberry puree to remove seeds and mix in powdered sugar.
- Cook raspberry mixture until reduced by half, stirring frequently.
- Add heavy whipping cream to the raspberry mixture and stir until combined.
- Pour warm raspberry mixture over chopped white chocolate and mix until smooth.
- Refrigerate ganache for at least 2 hours, then scoop and roll into balls.
- Melt dark chocolate until smooth for coating.
- Dip truffles in melted dark chocolate and let them set on parchment paper.
- Refrigerate until chocolate shell sets.
Notes
Using high-quality chocolate enhances flavor and texture.
Chill ganache longer if it isn’t firm enough to roll into balls.
For a dairy-free version, use dairy-free chocolate and alternative cream.
