Description

These Cottage Cheese Brownies are rich and fudgy, made with almond flour and dark chocolate. Perfect for a quick dessert that packs a protein punch!


Ingredients

  • 2/3 cup cottage cheese blended
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/2 cup almond flour
  • 1/3 cup cacao powder
  • 1/4 tsp baking soda
  • 1/3 cup chocolate chips (semi-sweet, dark chocolate or milk chocolate)

Instructions

  1. Preheat your oven to 350°F and line an 8×8-inch baking dish with parchment paper or grease it well.
  2. Blend the cottage cheese until smooth, resembling a thick yogurt, then set aside.
  3. In a large bowl, whisk the eggs, vanilla extract, coconut sugar, and maple syrup together. Stir in the blended cottage cheese until fully combined.
  4. Add almond flour, cacao powder, and baking soda to the mixture. Stir until a smooth batter forms.
  5. Fold in the chocolate chips, reserving some for topping if desired.
  6. Pour the batter into the prepared baking dish, spreading it evenly, and sprinkle with remaining chocolate chips.
  7. Bake for about 24–26 minutes, or until a toothpick comes out mostly clean with a few moist crumbs for a fudgy texture.
  8. Allow the brownies to cool in the pan for at least 15–20 minutes before slicing.

Notes

These brownies taste even better the next day as they continue to set.
Store in an airtight container for up to 5 days, or freeze for longer storage.
You can substitute coconut sugar with brown sugar if needed.
