This Cowboy Caviar is a vibrant mix of beans, vegetables, and spices. It’s easy to prepare, perfect for gatherings, and bursting with flavor!

- 4 large Roma tomatoes, seeded and diced
- 1/2 red onion, diced
- 1 (15 oz) can black beans, rinsed and drained
- 1 (15 oz) can black-eyed peas, rinsed and drained
- 1 (10 oz) package frozen corn kernels, thawed
- 1 green bell pepper, seeded and diced
- 1–2 jalapeños, seeded and diced
- 1 bunch cilantro, chopped
- 1/3 cup olive oil
- 1 tablespoon white wine vinegar
- 1 tablespoon granulated sugar
- Juice of 1 lime
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper, optional
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together olive oil, white wine vinegar, sugar, lime juice, chili powder, garlic powder, and cayenne.
- In a large bowl, combine diced tomatoes, onion, black beans, black-eyed peas, corn, bell pepper, jalapeños, and cilantro.
- Pour the dressing over the vegetable mix and gently toss until evenly coated.
- Cover and refrigerate for at least 30 minutes to let flavors meld before serving.
Notes
Feel free to use fresh corn instead of frozen when in season.
For a creamier texture, you can add diced avocado right before serving.
