Description

This Cowboy Caviar is a vibrant mix of beans, vegetables, and spices. It’s easy to prepare, perfect for gatherings, and bursting with flavor!


Ingredients

Scale
  • 4 large Roma tomatoes, seeded and diced
  • 1/2 red onion, diced
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can black-eyed peas, rinsed and drained
  • 1 (10 oz) package frozen corn kernels, thawed
  • 1 green bell pepper, seeded and diced
  • 12 jalapeños, seeded and diced
  • 1 bunch cilantro, chopped
  • 1/3 cup olive oil
  • 1 tablespoon white wine vinegar
  • 1 tablespoon granulated sugar
  • Juice of 1 lime
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper, optional
  • Salt and pepper to taste

Instructions

  • In a small bowl, whisk together olive oil, white wine vinegar, sugar, lime juice, chili powder, garlic powder, and cayenne.
  • In a large bowl, combine diced tomatoes, onion, black beans, black-eyed peas, corn, bell pepper, jalapeños, and cilantro.
  • Pour the dressing over the vegetable mix and gently toss until evenly coated.
  • Cover and refrigerate for at least 30 minutes to let flavors meld before serving.

Notes

Feel free to use fresh corn instead of frozen when in season.
For a creamier texture, you can add diced avocado right before serving.
Make ahead of time for more developed flavors!
