  • 1 ½ lb. boneless skinless chicken breasts
  • 1 ½ tbsp olive oil
  • 1½ tsp Italian seasoning
  • ½ tsp onion powder
  • ½ tsp pepper
  • ½ tsp sea salt
  • 1 cup orzo, uncooked
  • 2 ¼ cups chicken broth
  • 34 garlic cloves, minced
  • 12 oz cherry tomatoes
  • 68 oz cream cheese, cubed
  • 2 handfuls baby spinach
  • ¼ cup parmesan, freshly grated
  • 12 tbsp heavy cream, optional

Instructions

  • Preheat your oven to 375°F (190°C) and prepare a large baking dish with olive oil.
  • In a skillet, sauté cubed chicken with olive oil,Italian seasoning, onion powder, pepper, and sea salt until browned.
  • Stir in minced garlic, then add uncooked orzo, mixing well.
  • Pour in chicken broth and add cherry tomatoes, ensuring orzo is immersed.
  • Nestle cream cheese into the mixture, then layer in spinach and top with parmesan cheese.
  • Cover with foil and bake for 30 minutes, remove foil and bake for an additional 10 minutes until golden.
  • Allow to cool slightly before serving.

Notes

For meal prep, assemble the dish ahead of time and refrigerate until ready to bake.
Use low-sodium chicken broth for a healthier option.
