Description

This Creamy Chicken and Avocado Salad with Lime Yogurt Dressing is a blend of flavors with creamy avocado and zesty yogurt dressing, making it a perfect quick lunch or picnic dish.


Ingredients

  • 2 cups cooked canned chicken, shredded or chopped
  • 1 large ripe avocado, or two small ones, mashed
  • 1/2 cup cherry tomatoes, halved (optional)
  • 1/4 cup chopped fresh cilantro or parsley
  • 3 tablespoons plain Greek yogurt
  • Juice of 1 lime
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika or chili powder
  • 1/4 teaspoon cumin (optional for warmth)
  • Salt and black pepper, to taste
  • Optional: diced cucumber or jalapeño for added crunch or heat

Instructions

  • Combine shredded chicken, mashed avocado, cherry tomatoes, and herbs in a bowl.
  • Whisk Greek yogurt, lime juice, garlic powder, smoked paprika, and cumin in another bowl.
  • Pour dressing over the chicken mixture and gently toss to combine.
  • Taste and adjust seasoning as needed before serving.
  • Serve on greens, toast, or in wraps.

Notes

To prevent browning, add avocado just before serving or drizzle with lime juice.
This salad can be made a day in advance but best enjoyed fresh.
Add nuts or seeds for extra crunch if desired.
