Ingredients

  • 1 tablespoon olive oil
  • 8 oz mushrooms (crimini)
  • Salt and pepper
  • 16 oz potato gnocchi
  • ½ cup chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic (minced)
  • 1/2 teaspoon Italian seasoning or Herbs from Provence
  • 1/2 teaspoon smoked paprika
  • 5 oz fresh spinach
  • 1/4 teaspoon salt (to taste)
  • Coarsely ground black pepper (to taste)
  • Red pepper flakes (to taste)

Instructions

  • Heat olive oil in a skillet over medium-high heat.
  • Add mushrooms, season with salt and pepper, and cook until browned, reserving half for garnish.
  • Combine remaining mushrooms with gnocchi, broth, cream, garlic, seasoning, and paprika in the skillet; bring to boil.
  • Cover and simmer for about 5 minutes to thicken the sauce and cook the gnocchi.
  • Add spinach, stir, and cook until wilted. Adjust seasoning as needed.
  • Top with reserved mushrooms and serve.

Notes

For gluten-free options, replace gnocchi with a gluten-free type.
Use vegetable broth to make it vegetarian-friendly.
Add a squeeze of fresh lemon juice for extra brightness.
