Description

This Creamy Tuscan Gnocchi is a delightful blend of rich flavors and quick prep. Made with gnocchi, sun-dried tomatoes, spinach, and creamy goodness, it’s perfect for weeknight dinners or family gatherings!


Ingredients

  • 3 tablespoons unsalted butter
  • 2 cloves garlic, finely chopped
  • 1 pound uncooked gnocchi
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper
  • Salt and black pepper to taste
  • 1 cup heavy cream
  • 1/2 cup vegetable stock
  • 1/4 cup grated Parmesan cheese
  • 3 cups fresh baby spinach
  • 2 tablespoons fresh basil, finely sliced

Instructions

  • Melt the butter in a large skillet over medium-high heat.
  • Add the garlic and uncooked gnocchi, sauté until golden brown.
  • Stir in sun-dried tomatoes, Italian seasoning, crushed red pepper, salt, and black pepper.
  • Pour in heavy cream and vegetable stock, then add Parmesan cheese and simmer.
  • Once sauce thickens, add baby spinach and cook until wilted.
  • Garnish with fresh basil and serve hot.

Notes

Swap butter for olive oil to make it dairy-free.
Keep leftover gnocchi in an airtight container for up to three days.
Add a splash of cream when reheating to revive texture.
