- Salt and black pepper to taste
- 1 cup heavy cream
- 1/2 cup vegetable stock
- 1/4 cup grated Parmesan cheese
- 3 cups fresh baby spinach
- 2 tablespoons fresh basil, finely sliced
Instructions
- Melt the butter in a large skillet over medium-high heat.
- Add the garlic and uncooked gnocchi, sauté until golden brown.
- Stir in sun-dried tomatoes, Italian seasoning, crushed red pepper, salt, and black pepper.
- Pour in heavy cream and vegetable stock, then add Parmesan cheese and simmer.
- Once sauce thickens, add baby spinach and cook until wilted.
- Garnish with fresh basil and serve hot.

Swap butter for olive oil to make it dairy-free.
Keep leftover gnocchi in an airtight container for up to three days.
