- 4 cabbage steaks
- 1/3 cup olive oil (extra virgin)
- 1 1/2 tsp. minced garlic
- 1/4 tsp. salt
- 1/2 tsp. pepper
- 1 tsp. smoked paprika
- 1 1/2 cups grated parmigiano reggiano cheese
- 1 tbsp. balsamic vinegar
- 1 tbsp. chopped parsley
Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Wash and slice the cabbage in half vertically, then slice about 1 inch thick through the stem to create steaks that hold together.
- Combine olive oil, 1/3 cup grated Parmesan, minced garlic, salt, pepper, and smoked paprika in a mixing bowl.
- Brush both sides of the cabbage steaks with the Parmesan mixture.
- Place the remaining Parmesan in piles on the baking sheet, approximately 1/3 cup for each steak.
- Set each cabbage steak onto its cheese bed on the baking sheet.
- Roast the steaks in the preheated oven for 20-25 minutes, until the cheese is crispy and browned.
- Drizzle balsamic vinegar over the roasted cabbage steaks and sprinkle with chopped parsley before serving.
