Description

Crispy Sweet Potato Stacks are a delicious side dish that combines layers of sweet potatoes, garlic, and cheese for an impressive presentation and great flavor.


Ingredients

  • ½ cup unsalted butter, melted
  • 2 teaspoons garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • ¼ cup finely shredded Gruyere cheese
  • 5 medium sweet potatoes, peeled and sliced into â…›-inch thick rounds
  • Fresh herbs (optional)

Instructions

  • Preheat the oven to 400°F (200°C) and prepare a muffin tin by spraying it with cooking spray.
  • In a large bowl, whisk together melted butter, garlic powder, salt, and black pepper until smooth.
  • Stir in Parmesan and Gruyere cheese until evenly mixed.
  • Add sweet potato slices to the bowl and toss to coat them in the mixture.
  • Stack the coated slices in the muffin cups, filling above the rim.
  • Cover the muffin tin with aluminum foil and bake for 30 minutes.
  • Remove foil and continue baking for another 30-35 minutes until crispy and golden.
  • Let the stacks cool for 5 minutes before carefully removing them.

Notes

Ensure sweet potato slices are uniform for even cooking.
These stacks can be made ahead of time and reheated in the oven.
