- 1 (20 oz) bag 15 bean soup mix
- 2 cups chopped ham
- 1 (14.5 oz) can diced tomatoes
- 1 medium onion, diced
- 1 cup chopped carrots
- 3 stalks celery, chopped
- 1 tablespoon minced garlic
- 1 tablespoon Worcestershire sauce
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon chicken bouillon
- 6 cups no-sodium chicken broth
- 1/4 cup chopped fresh parsley (or 2 tablespoons dried parsley)
- Salt and pepper, to taste
Instructions
- Rinse and soak the 15 bean soup mix overnight or for 6–8 hours.
- In a crockpot, combine soaked beans, chopped ham, diced tomatoes (with juice), onion, carrots, celery, garlic, Worcestershire sauce, chili powder, cumin, oregano, chicken bouillon, and chicken broth; stir well.
- Cover and cook on low for 6 to 8 hours or high for 4 to 6 hours.
- Stir in chopped parsley before serving.
- Ladle soup into bowls and serve warm with crusty bread or cornbread.
Notes
Always soak the beans beforehand for better texture and to reduce cooking time.
Use low-sodium broth to control the saltiness of the soup.
This soup can be made vegetarian by omitting the ham and using vegetable broth.
