- 4 bacon strips
- 1 pound lean ground beef
- 1 yellow onion, diced
- 2 cloves garlic, minced
- ½ teaspoon salt
- ½ teaspoon black pepper
- 4 cups beef broth
- 3 medium russet potatoes, peeled and diced
- 10.5 ounces cheddar cheese soup, canned
- 1 cup heavy whipping cream
- 8 ounces freshly grated cheddar cheese, plus more for serving
- Pickle slices, optional for serving
- Diced tomatoes, optional for serving
Instructions
- Cook the bacon in a skillet until crispy, then transfer to a paper towel and retain some grease in the skillet.
- Brown the ground beef in the same skillet, add onions and garlic, and cook until onions are translucent.
- Transfer the beef mixture to a crockpot, add beef broth, potatoes, and cheese soup, and stir well. Cook on low for 6–8 hours or high for 4 hours.
- About 30 minutes before serving, add heavy cream and grated cheddar cheese, stirring until melted.
- Serve in bowls topped with crispy bacon, additional cheese, and your choice of pickles or tomatoes.
Notes
You can substitute ground turkey for the ground beef for a lighter option.
For a thicker soup, mash some potatoes against the sides of the crockpot before serving.
Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
