- 1 lb stew meat (beef chuck or round)
- 1 lb kielbasa sausage (sliced)
- 1 medium onion (diced)
- 2 large carrots (sliced)
- 2 stalks celery (diced)
- 1 large russet potato (peeled and diced)
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 (16 oz) can pinto beans (rinsed and drained)
- 1 (15.25 oz) can corn (drained)
- 1 (14.5 oz) can diced tomatoes (do not drain)
- 2 tablespoons chili powder
- 2 teaspoons garlic powder
- 1 teaspoon dried oregano
- 2 tablespoons corn starch
- Salt and pepper to taste
Instructions
- Combine all ingredients in a slow cooker and stir well.
- Cook on low for 7-8 hours or high for 4-6 hours.
- To thicken, mix corn starch with cold water, add to crockpot, and cook for an additional 5-10 minutes.
- Taste and adjust seasoning; serve hot.
