Description

Ingredients

  • 1 lb stew meat (beef chuck or round)
  • 1 lb kielbasa sausage (sliced)
  • 1 medium onion (diced)
  • 2 large carrots (sliced)
  • 2 stalks celery (diced)
  • 1 large russet potato (peeled and diced)
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 (16 oz) can pinto beans (rinsed and drained)
  • 1 (15.25 oz) can corn (drained)
  • 1 (14.5 oz) can diced tomatoes (do not drain)
  • 2 tablespoons chili powder
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 2 tablespoons corn starch
  • Salt and pepper to taste

Instructions

  • Combine all ingredients in a slow cooker and stir well.
  • Cook on low for 7-8 hours or high for 4-6 hours.
  • To thicken, mix corn starch with cold water, add to crockpot, and cook for an additional 5-10 minutes.
  • Taste and adjust seasoning; serve hot.

Notes

Store leftovers in an airtight container for up to 4 days.
Can be frozen for up to 3 months; reheat gently on the stove or microwave.
