- 1 pound ground Italian sausage
- 1 medium onion (diced)
- 3 cloves garlic (minced)
- 2 medium carrots (peeled and thinly sliced)
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 packet 19-ounce frozen cheese tortellini
- 1 ½ cups heavy cream
- 2 cups fresh baby spinach leaves
- 1 cup shredded Parmesan cheese
- Parsley for garnish
Instructions
- Brown the sausage in a skillet and drain excess grease.
- Add diced onion, minced garlic, and sliced carrots to the slow cooker.
- Pour in chicken broth and season with Italian seasoning, salt, and pepper; stir well.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Stir in frozen tortellini 30 minutes before serving; cover and cook until tender.
- Add heavy cream, spinach, and Parmesan; cook until spinach wilts.
- Serve hot, garnished with parsley and additional Parmesan.
Notes
Store leftovers in an airtight container for up to 4 days in the fridge.
To freeze, portion into bags or containers, removing excess air; lasts up to 3 months.
Reheat gently on the stove, adding broth or cream to restore texture.
