Description

This Crockpot Sausage Tortellini Soup combines rich flavors and simple ingredients for a hearty meal. It’s perfect for a quick dinner that warms the soul.


Ingredients

  • 1 pound ground Italian sausage
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 2 medium carrots (peeled and thinly sliced)
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 packet 19-ounce frozen cheese tortellini
  • 1 ½ cups heavy cream
  • 2 cups fresh baby spinach leaves
  • 1 cup shredded Parmesan cheese
  • Parsley for garnish

Instructions

  • Brown the sausage in a skillet and drain excess grease.
  • Add diced onion, minced garlic, and sliced carrots to the slow cooker.
  • Pour in chicken broth and season with Italian seasoning, salt, and pepper; stir well.
  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  • Stir in frozen tortellini 30 minutes before serving; cover and cook until tender.
  • Add heavy cream, spinach, and Parmesan; cook until spinach wilts.
  • Serve hot, garnished with parsley and additional Parmesan.

Notes

Store leftovers in an airtight container for up to 4 days in the fridge.
To freeze, portion into bags or containers, removing excess air; lasts up to 3 months.
Reheat gently on the stove, adding broth or cream to restore texture.
