- 1.5 lb red skinned potatoes
- 2 ropes andouille sausage
- 3–4 sweet corn on the cob
- 1 onion
- 5 garlic cloves
- 4 cups chicken broth
- 1–2 cups water
- 2 tablespoons Old Bay seasoning
- 2 tablespoons creole/cajun seasoning
- 2 lbs raw jumbo shrimp
- 1 lemon
- Chopped parsley
Instructions
- Layer the ingredients starting with potatoes in the crockpot.
- Add sausage, corn, onion, and garlic on top.
- Pour in chicken broth and water to cover ingredients.
- Stir in Old Bay and cajun seasonings.
- Cook on Low for 5-6 hours or High for 3-4 hours until potatoes are tender.
- In the last 30-60 minutes, add shrimp and cook until pink and opaque.
- Squeeze fresh lemon juice and sprinkle chopped parsley before serving.
Notes
Allow the dish to cool before storing in an airtight container.
For best texture, add thawed shrimp in the last cooking phase.
