- 28 oz can diced tomatoes
- 3 cups chicken broth
- 3 tablespoons tomato paste
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- ½ teaspoon garlic powder
- ¼ teaspoon cayenne pepper
- Salt and pepper (to taste)
- 1 bay leaf
- 15 oz can black beans (rinsed and drained)
- 15 oz can dark red kidney beans (rinsed and drained)
- 15 oz can cannellini beans (rinsed and drained)
Instructions
- Brown the turkey: Heat olive oil in a skillet, add turkey, onion, and garlic, cooking until turkey is browned; transfer to slow cooker.
- Add the veggies and spices: Combine all vegetables, diced tomatoes, broth, tomato paste, spices, and bay leaf in the slow cooker and stir well.
- Let it simmer: Cook on Low for 6–8 hours or High for 3–4 hours, allowing flavors to meld.
- Add the beans: Stir in black beans, kidney beans, and cannellini beans about an hour before serving.
- Serve and enjoy: Dish into bowls and add toppings as desired.
