Description

These Decadent Cottage Cheese Date Brownies are a delightful treat with their rich flavor profile. Made with wholesome ingredients like cottage cheese and dates, they offer a quick and easy way to enjoy a homemade dessert that’s packed with nutrients and great taste.

Ingredients

Scale
  • 10 dates (soaked in hot water for 10 minutes to soften)
  • 1/2 cup almond flour
  • 4 tbsp chocolate protein powder
  • 2 tbsp cocoa powder
  • 2 1/2 tbsp maple syrup
  • 1 tsp vanilla
  • 1/8 teaspoon salt
  • 1 cup cottage cheese (good culture brand provides the best thick texture)
  • 1/2 cup vanilla protein powder
  • 1 1/4 cups almond flour (i always use king arthur for a finer crumb)
  • 2 1/2 tbsp maple syrup
  • 2 tbsp cashew butter
  • 1 1/2 tsp vanilla
  • 1/3 cup mini chocolate chips (i prefer enjoy life for their clean ingredients)

Instructions

  • Soak the 10 dates in hot water for 10 minutes to soften, then drain well. Blend the dates with chocolate protein powder, cocoa powder, maple syrup, vanilla, and salt until smooth to create the brownie base.
  • In a bowl, combine cottage cheese, vanilla protein powder, almond flour, cashew butter, remaining maple syrup, and vanilla. Mix until smooth, then gently fold in the mini chocolate chips.
  • Line an 8×8 inch baking dish with parchment paper. Spread the date-chocolate mixture evenly as the bottom layer, then layer the cottage cheese mixture on top, pressing gently to cover evenly.
  • Freeze the dish for at least 1 hour until firm. After freezing, lift out using parchment paper and cut into squares.

Notes

Ensure dates are thoroughly soaked for the best blending results.
Using damp hands can make spreading the mixtures easier and less sticky.
