Ingredients

  • 1/2 cup unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 3 cups confectioners' sugar
  • 2 tablespoons meringue powder
  • 1/4 cup room temperature water
  • 1/2 teaspoon vanilla extract
  • gel food colouring

Instructions

  1. Cream butter and sugar in a large mixing bowl with a hand mixer on medium speed until light and fluffy, about 2 minutes.
  2. Add egg and vanilla extract and beat until combined.
  3. Switch the mixer to low speed, add baking powder and salt, then gradually add the flour and mix until combined.
  4. Shape the dough into a ball, wrap in plastic wrap, and freeze for 30 minutes or refrigerate until firm (at least 1 hour, up to overnight).
  5. Preheat oven to 350°F. Line a half sheet baking pan with parchment paper or a silicone baking mat.
  6. Remove dough from the fridge and let it sit for 5-10 minutes at room temperature. Roll out on a floured surface to 1/4-inch thickness.
  7. Cut dough into egg shapes using a cookie cutter and place cookies on the lined baking sheet, one inch apart. Re-roll scraps to make more cookies.
  8. Bake for 8-10 minutes until edges are golden brown. Cool on the sheet for a couple of minutes before transferring to a wire rack.

Notes

Make sure to let the dough chill properly to avoid spreading during baking.
