Description

These Easy Confetti Cookies combine the delightful flavor of sprinkles with the simplicity of cake mix, making them a fun treat that’s quick to prepare. They’re perfect for celebrations or just a sweet snack at home!


Ingredients

  • 13.25 oz white cake mix box
  • ½ cup unsalted butter (113 g), melted, slightly cooled
  • 2 large eggs
  • 5 tablespoons rainbow confetti sprinkles, plus more for rolling
  • 1 teaspoon pure vanilla extract, optional
  • ¼ teaspoon almond extract, optional

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, mix the dry cake mix with melted butter, eggs, and optional extracts until it forms a thick dough.
  3. Fold in the rainbow sprinkles gently without over-mixing; the dough will be sticky and tacky.
  4. Let the dough rest uncovered for about 5 minutes to thicken as the cake mix absorbs moisture.
  5. Use a medium cookie scoop to portion the dough into balls.
  6. Roll each cookie ball in additional sprinkles, pressing lightly to ensure they stick.
  7. Arrange the coated dough balls on the baking sheets with about 3 inches of space in between. Bake for 10-12 minutes until the edges are set but the center looks slightly underdone.
  8. Cool the cookies on the baking sheet for 5 minutes before transferring them to a wire rack to firm up.

Notes

For best results, let the dough rest for the full 5 minutes to ensure proper texture.
Add more sprinkles on top right before baking for extra decoration!
