- 2 large eggs
- 5 tablespoons rainbow confetti sprinkles, plus more for rolling
- 1 teaspoon pure vanilla extract, optional
- ¼ teaspoon almond extract, optional
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, mix the dry cake mix with melted butter, eggs, and optional extracts until it forms a thick dough.
- Fold in the rainbow sprinkles gently without over-mixing; the dough will be sticky and tacky.
- Let the dough rest uncovered for about 5 minutes to thicken as the cake mix absorbs moisture.
- Use a medium cookie scoop to portion the dough into balls.
- Roll each cookie ball in additional sprinkles, pressing lightly to ensure they stick.
- Arrange the coated dough balls on the baking sheets with about 3 inches of space in between. Bake for 10-12 minutes until the edges are set but the center looks slightly underdone.
- Cool the cookies on the baking sheet for 5 minutes before transferring them to a wire rack to firm up.
Notes
For best results, let the dough rest for the full 5 minutes to ensure proper texture.
Add more sprinkles on top right before baking for extra decoration!
