- 15 oz black beans (1 can, drained and rinsed)
- 15 oz pinto beans (1 can, drained and rinsed)
- 1 cup frozen corn (thawed)
Instructions
- Heat olive oil in a large pot over medium heat, add ground beef, onion, and garlic, and sauté for 10-12 minutes until the beef is browned.
- Stir in diced tomatoes, beef broth, and spices. Mix well.
- Fold in black beans, pinto beans, and corn until well combined.
- Bring to a boil, then reduce heat and simmer for 30 minutes to 1 hour, stirring occasionally.
- Adjust seasonings, serve hot, and add desired toppings.
