Description

This Elegant Graduation Cake combines delightful flavors and a stunning fondant cap topper. Perfect for celebrating achievements with a homemade touch, it’s crafted with buttercream frosting, and layered cakes, making it a memorable centerpiece for any graduation party.


Ingredients

Scale
  • 2 yellow sheet cakes
  • 2 chocolate sheet cakes
  • 1 cotton candy cake
  • 10 cups American buttercream frosting (tinted yellow with gel food coloring)
  • 4 cups marshmallow fondant (2 cups of black and 2 cups of white)
  • 1 batch Rice Krispie treats (can also use store-bought)

Instructions

  1. Bake 2 yellow sheet cakes and 2 chocolate sheet cakes in 9×13 dimensions, along with 1 cotton candy dome cake (5-inch diameter). Let them cool completely.
  2. Prepare the yellow buttercream frosting while the cakes cool.
  3. For the cap cake, place the dome cake on a cake board and frost it with buttercream. Chill for 20 minutes, then cover with black fondant, smoothing it out, and cut excess.
  4. Create the top part of the cap using a square cardboard piece with black fondant and a small circle for the top, attaching with corn syrup.
  5. Stick the cardboard cap on the dome cake with melted chocolate or royal icing and steam to remove powdered sugar.
  6. Form a diploma with rice krispie treats shaped into a cylinder, covered in white fondant and secured with buttercream, adding red ribbon for detail.
  7. Assemble the cake by placing the chocolate sheet cakes on a large board, icing in-between, then topping with yellow sheet cakes and frosting the top and sides evenly.
  8. Pipe decorative roses along the top and sides of the cake using yellow icing and a star tip.
  9. Position the diploma and cap on the cake, using dowels for support, and add letters for a congratulatory message on the board.

Notes

Ensure cakes are completely cooled before frosting for better adherence.
Customize the colors of the fondant to match your grad’s school colors.
Leftover cotton candy cake batter can be used for additional cupcakes!
