- 1 yellow onion, chopped
- 1/3 cup crumbled blue cheese
- 1/4 cup panko breadcrumbs

- 4 beef tenderloin, filet mignon steaks (~8 ounces each)

Instructions
- Preheat your oven to 450 degrees Fahrenheit.
- In a large skillet over medium heat, melt 2 tablespoons of butter.
- Add the chopped onions and cook for 3-4 minutes until they are translucent, stirring occasionally.
- Transfer the cooked onions to a mixing bowl and allow them to cool for about 2-3 minutes.
- Once cooled, add blue cheese, panko breadcrumbs, kosher salt, and black pepper to the bowl.
- Gently mash the mixture together with a fork until combined.
- In the same skillet, increase the heat to high and add the remaining 2 tablespoons of unsalted butter.
- Season the filet mignon steaks generously with kosher salt and black pepper on all sides.
- Sear the steaks for 3 minutes on each side until browned.
- Top each steak with the blue cheese mixture and place them in the oven.
- Bake for 4 minutes for rare, 5-6 minutes for medium, or longer for well-done steaks.
- After baking, let the steaks rest for 10 minutes covered with foil before serving.
