Ingredients
- Flour tortillas
- Cooked leftover turkey
- Shredded mozzarella
- Shredded cheddar
- Finely diced sweet pepper
- Corn
- Chopped green onion
- Olive oil
Instructions
- Combine chopped leftover turkey, sweet pepper, corn, and green onion in a bowl.
- Mix shredded mozzarella and cheddar in a separate bowl.
- Heat olive oil in skillet over medium heat.
- Place one tortilla in skillet, add cheese mixture on one half.
- Top with turkey and vegetable mixture, followed by more cheese.
- Fold the tortilla over the filling, pressing down.
- Cook until the bottom is golden brown and cheese melts, about 1-2 minutes.
- Flip and cook the other side until golden brown, about another 2 minutes.
- Transfer quesadilla to a plate and repeat with remaining ingredients.
- Slice cooked quesadilla into wedges and serve hot.
Notes
For a healthier option, substitute with whole wheat tortillas.
