- 1 tablespoon extra virgin olive oil
- 2 large sweet onions, thinly sliced
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- ¼ cup (½ stick / 57 g) unsalted butter
- 3 teaspoons garlic, minced
- 1 teaspoon kosher salt
- ½ teaspoon pepper
- ¼ teaspoon crushed red pepper
- 2 cups (476 g) heavy cream
- 1 cup (100 g) parmesan cheese, grated
- 9 lasagna noodles, cooked al dente according to package instructions
- 1 ½ cups (369 g) ricotta cheese
- 2 cups (280 g) rotisserie chicken, chopped
- 2 cups (226 g) gruyere cheese, shredded, divided
- ½ cup (50 g) parmesan cheese, grated
- 1 ½ cups (45 g) spinach, chopped, divided
- parsley, chopped for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Spray a 9×13-inch baking dish with nonstick spray and set aside.
- In a pan, heat 1 tablespoon of unsalted butter and 1 tablespoon of olive oil over medium heat.
- Add the sliced onions, kosher salt, and black pepper; sauté until caramelized, about 20 minutes.
- In another pan, melt ¼ cup of unsalted butter, then add minced garlic, salt, pepper, and crushed red pepper; cook for a couple of minutes.
- Pour in the heavy cream and stir until well combined; simmer for about 5 minutes.
- In a mixing bowl, combine ricotta cheese, cooked rotisserie chicken, 1 cup of gruyere cheese, grated parmesan, and 1 cup of spinach.Drizzle a bit of cream sauce into the mixture for moisture.
- Spread a thin layer of the cream sauce at the bottom of the prepared baking dish.
- Fill each lasagna noodle with the chicken mixture, roll up, and place seam-side down in the dish.
- Once all noodles are arranged, pour the remaining cream sauce over the roll-ups, ensuring they are well covered.
- Top with the remaining gruyere cheese, parmesan cheese, and an additional cup of spinach.
- Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 40 minutes until bubbly and golden brown.
- Garnish with chopped parsley before serving.
Notes
For best flavor, use freshly grated cheese instead of pre-packaged.
You can substitute the rotisserie chicken with any shredded cooked chicken you have on hand.
Feel free to add additional vegetables like mushrooms or bell peppers for extra nutrition.
