- 2 pounds Yukon gold or russet potatoes
- 1/4 cup unsalted butter, divided
- 4 cloves garlic, minced
- 3/4 cup heavy cream, warmed
- 3/4 teaspoon salt (or more to taste)
- 1/2 teaspoon ground black pepper
- 1 tablespoon fresh chives, finely chopped
- 1 teaspoon fresh thyme (or rosemary), finely chopped
- 1 teaspoon fresh sage, finely chopped
Instructions
- Place peeled and quartered potatoes in a large pot and cover with salted water.
- Bring to a boil, then reduce heat and let simmer for 15-20 minutes until fork-tender.
- Carefully drain potatoes and return to the pot.
- Mash until smooth and lump-free.
- In a saucepan, melt half of the butter with minced garlic over medium-low heat for 2 minutes.
- Stir in warmed heavy cream and then pour into mashed potatoes.
- Mix until creamy and well combined.
- Season with salt, pepper, chives, thyme, and sage, stirring gently.
Notes
Avoid over-mashing to prevent gluey potatoes.
Use room temperature butter and warmed cream for smooth incorporation.
Store leftovers in an airtight container for 3-4 days.
