Description

These soft, chewy Gingerbread Cookie Bars are a cozy treat, topped with luscious cream cheese frosting, perfect for any festive occasion or family gathering.


Ingredients

  • Butter, Softened (1/2 cup)
  • Cream Cheese (1 – 8 oz package, Softened)
  • Powdered Sugar (2 1/2 cups)
  • Vanilla (1/2 tsp & 2 tsp)
  • Flour (2 cups + 2 tbsp)
  • Ginger (1 1/2 tsp)
  • Cinnamon (1 tsp)
  • Nutmeg (1/4 tsp)
  • Cloves (1/4 tsp)
  • Baking Soda (1 tsp)
  • Salt (1/2 tsp)
  • Butter, Melted & Cooled Slightly (3/4 cup)
  • Brown Sugar (1 cup)
  • Unsulphured Molasses (1/4 cup)
  • Egg (1)

Instructions

  • Preheat the oven to 350°F (175°C) and prepare a 9 x 13-inch pan with cooking spray or grease with butter.
  • Whisk together the flour, ginger, cinnamon, nutmeg, cloves, baking soda, and salt in a medium bowl.
  • In another bowl, cream together softened butter, brown sugar, and molasses until smooth, then mix in egg and vanilla.
  • Gradually add the flour mixture to the wet ingredients and mix until just combined.
  • Spread the thick dough evenly in the prepared pan and bake for 14 to 17 minutes until golden and a toothpick comes out clean.
  • Cool the bars for 10-15 minutes, then whip up the cream cheese frosting by beating cream cheese and remaining butter, adding powdered sugar and vanilla until fluffy.
  • Spread frosting over the cooled bars and decorate as desired.

Notes

Ensure your butter and cream cheese are at room temperature for best results.
Avoid overmixing to maintain a chewy texture.
These bars can be made ahead of time and stored or frozen.
