Description

  • green sanding sugar or shamrock sprinkles

Instructions

  • Preheat your oven to 350° F and line muffin pans with 18 liners.
  • In a large bowl, cream together the sugar and unsalted butter until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the green food coloring and vanilla extract.
  • In a separate bowl, combine the all-purpose flour, salt, baking soda, and baking powder.
  • Incorporate the buttermilk into the wet ingredients mixture.
  • Gradually mix in the dry flour mixture until well blended.
  • Pour the batter into the prepared liners, filling them about ¾ full.
  • Bake for approximately 17 minutes, checking for doneness with a toothpick.

Notes

Ensure the butter is softened for easier mixing.
You can adjust the amount of green food coloring to achieve your desired shade.
For a decorative touch, sprinkle green sanding sugar or shamrock sprinkles on top of the frosted cupcakes.
