- 1 tbsp olive oil
- 3 green onions, chopped, separated whites from greens
- 1 lb ground turkey
- 16 oz cole slaw mix
- 1 cup shredded carrots
- 3–4 garlic cloves, minced
- 1 inch ginger grated
- ¼ c plus tbsp low-sodium soy sauce
- 2 tsp sriracha
- 1–2 tbsp sweet chili sauce
- 1 tbsp toasted sesame oil
- â…“ cup chopped cilantro
- ½ tsp pepper
- ½ tsp salt, more or less to taste
Instructions
- Heat olive oil in a large pan over medium-high heat. Add chopped green onion whites and sauté for 1-2 minutes.
- Add ground turkey, breaking it into smaller pieces, and cook until browned. In the last minute, add minced garlic and ginger.
- Mix in cole slaw, shredded carrots, and soy sauce. Cook for 4-6 minutes until tender, stirring often.
- Reduce heat and stir in sriracha, sweet chili sauce, sesame oil, green onion greens, and cilantro. Adjust seasoning with salt and pepper.
- Serve garnished with additional cilantro and sesame seeds.
Notes
Feel free to add any other vegetables you enjoy such as bell peppers or snap peas.
Adjust the spice level by adding more or less sriracha to your taste.
