Description

This Guinness Beef Stew is a comforting dish that combines tender beef, rich Guinness, and hearty vegetables, perfect for a cozy family dinner. Quick to prepare and deliciously savory, it’s sure to impress anyone seeking hearty comfort food.


Ingredients

  • 2 tbsp olive oil
  • 2.5 lb beef chuck
  • 3/4 tsp salt
  • 3/4 tsp black pepper
  • 3 garlic cloves, minced
  • 2 onions, chopped
  • 6 oz bacon, diced
  • 3 tbsp flour
  • 440ml Guinness beer
  • 4 tbsp tomato paste
  • 3 cups chicken stock
  • 3 carrots, peeled and cut
  • 2 large celery stalks, cut
  • 2 bay leaves
  • 3 sprigs thyme

Instructions

  • Cut the beef into 5cm chunks and sprinkle with salt and pepper.
  • Heat oil in a heavy pot over high heat; add the beef in batches to brown. Remove to a plate as each batch is done.
  • Reduce heat to medium, adding more oil if needed.
  • Cook garlic and onion for 3 minutes until soft, then mix in the bacon.
  • Continue cooking until the bacon is browned, then add the carrot and celery.
  • Stir in flour and cook for 1 minute.
  • Pour in Guinness, chicken stock, and tomato paste, stirring to combine and dissolve the flour. Add bay leaves and thyme.
  • Return the browned beef to the pot with juices. Ensure liquid covers the beef.
  • Cover pot, lower heat, and simmer gently for 2 hours until beef is tender; then remove the lid and simmer for another 30-45 minutes until beef is falling apart and sauce thickens.
  • skim off excess fat if desired, adjusting seasonings before serving.

Notes

For a gluten-free option, substitute the all-purpose flour with gluten-free flour.
Serve with creamy mashed potatoes to soak up the delicious sauce.
You can also add potatoes or parsnips for extra heartiness.
