Description

This Healthy Cheesy Ground Beef Rice Casserole is a delightful blend of seasoned ground beef, fluffy rice, and creamy cheddar. Perfect for quick dinners and full of comforting flavors!


Ingredients

  • 1 lb lean ground beef
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 2 cups cooked white rice
  • 10.5 oz cream of mushroom soup
  • 1/2 cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 teaspoon paprika
  • Salt and pepper (to taste)
  • Chopped parsley (optional, for garnish)

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Cook the ground beef and onion until the meat is no longer pink; drain excess grease.
  • Add minced garlic and sauté until fragrant.
  • Mix cream of mushroom soup, milk or broth, paprika, salt, and pepper in a separate bowl.
  • Combine the cooked rice, beef mixture, one cup of cheese, and creamy sauce in the baking dish.
  • Sprinkle remaining cheese on top and cover with aluminum foil.
  • Bake covered for 20 minutes, then uncover and bake an additional 10 minutes until bubbly.
  • Optional: Broil for 2 minutes for a crispy top.
  • Let rest for 5 minutes, garnish with parsley, and serve.

Notes

Feel free to substitute ground beef with turkey or chicken.
For a gluten-free option, use gluten-free cream of mushroom soup.
