Description

This Healthy Crockpot Tater Tot Casserole packs irresistible flavors with tater tots, ground beef, and cheese, making it an easy, comforting meal perfect for gatherings.


Ingredients

Scale
  • 32 ounces frozen tater tots
  • 1 pound ground beef (browned and drained)
  • 2 cups shredded cheddar cheese (divided)
  • 10.5 ounces cheese sauce
  • 1 tablespoon taco seasoning
  • ½ tablespoon minced onion
  • Freshly chopped cilantro (optional garnish)

Instructions

  • Prepare the crockpot by spraying it with nonstick cooking spray.
  • Layer half of the tater tots on the bottom of the crockpot.
  • In a bowl, mix the browned ground beef, cheese sauce, taco seasoning, minced onion, and half of the cheddar cheese.
  • Spoon the beef mixture over the tater tots in the crockpot.
  • Add the remaining tater tots on top of the beef layer.
  • Sprinkle the remaining cheddar cheese over the tater tots.
  • Cover and cook on HIGH for about 2½ hours, until cheese is melted and bubbly.

Notes

For a healthier alternative, substitute ground beef with turkey or a plant-based option.
You can freeze leftovers for up to 3 months after they cool completely.
