Ingredients

  • 3 Vine Ripe Tomatoes
  • 1/2 small Onion
  • 2 tbsp Fresh Basil, Chopped
  • 1 clove Garlic, Minced
  • 1/2 tsp Dried Oregano
  • 1/4 tsp Black Pepper
  • 1/4 Fine Sea Salt
  • 1 French Baguette, Sliced
  • 3 tbsp Extra Virgin Olive Oil
  • Crumbled Feta
  • Balsamic Vinegar Glaze

Instructions

  • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  • Dice tomatoes and onion, removing seeds and excess juice.
  • Mix diced tomatoes, onion, basil, garlic, oregano, pepper, and salt in a bowl.
  • Slice baguette diagonally and brush both sides with olive oil.
  • Bake baguette slices on the baking sheet for 8 minutes until golden and crispy, flipping halfway through.
  • Drain excess liquid from the tomato mixture and spoon it over the toasted bread.
  • Drizzle balsamic glaze and top with crumbled feta.

Notes

For a gluten-free version, use gluten-free bread instead of baguette.
Allow the tomato mixture to marinate for at least 10 minutes for enhanced flavor.
To avoid sogginess, drain tomatoes well before mixing.
