- 1 cup white rice
- 1 cinnamon stick
- 4 cups water
- 1 cup milk or dairy alternative
- 1/2 cup sugar (or to taste)
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a blender, combine the rinsed rice, cinnamon stick, and 4 cups of water. Blend until the rice is somewhat broken down.
- Let the mixture sit for at least 3 hours, or overnight for better flavor.
- Strain the rice mixture through a fine mesh sieve or cheesecloth into a large pitcher. Discard the solids.
- Add the milk, sugar, vanilla, and salt to the rice milk. Stir well until sugar is dissolved.
- Serve over ice for a cold version, or heat for a comforting warm beverage.
Notes
Adjust sweetness by adding more or less sugar according to your taste.
