  • 1/4 cup Cake Flour
  • 1 cup All-Purpose Flour
  • 1 cup Whipping Cream
  • 1/2 cup White Chocolate Chips
  • Strawberries and Gold Leaves

Instructions

  • Heat milk with pistachio paste until simmering, then let infuse for ten minutes.
  • Whisk egg yolks, sweetened condensed milk, and cornstarch until smooth; gradually add hot milk.
  • Return mixture to heat, stir until thickened, then stir in butter and refrigerate until cool.
  • Make the craquelin by mixing butter, powdered sugar, and cake flour; add color and freeze circles.
  • Prepare choux pastry by boiling water, butter, salt, and sugar; add flour and stir.
  • Incorporate eggs into cooled dough, then pipe onto a baking sheet and top with frozen craquelin.
  • Bake until golden and puffed, then cool completely and fill with pistachio cream.
  • Decorate with whipped cream and melted white chocolate.
