- 1 cup diced yellow onion
- 2 lbs chicken breasts, cut into bite-sized pieces

- 1 tsp paprika
- ½ tsp ground black pepper
- ½ lb cauliflower florets
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 lemons, juice & zest
- 3 cups fresh baby spinach
Instructions
- Heat olive oil in a large skillet over medium-high heat and sauté the onion until softened.
- Add chicken and seasonings; cook until chicken browns and is no longer pink.
- Stir in cauliflower and rice; add lemon zest and juice, then deglaze the skillet with some broth.
- Pour in remaining broth, bring to a boil, reduce heat, cover, and simmer for about 10 minutes.
- Fold in spinach, cover, and let sit for another 10 minutes.
- Fluff rice with a fork and serve warm.
Notes
For a healthier option, replace white rice with quinoa or cauliflower rice.
