Description

This Marry Me Chicken Tortellini brings together tender chicken and cheesy tortellini in a velvety, spicy chipotle sauce. Perfect for busy weeknights and special occasions alike, it promises a delightful meal everyone will enjoy!


Ingredients

  • 1 pound boneless, skinless chicken breasts (or thighs)
  • Salt and pepper (to taste)
  • 1/4 teaspoon chili powder (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 34 cloves minced garlic
  • 12 teaspoons adobo sauce
  • ½ cup oil-packed sun-dried tomatoes (sliced)
  • 2 cups low-sodium chicken broth
  • 19 ounces cheese tortellini (refrigerated or frozen)
  • 1 cup heavy cream
  • ½ cup Parmesan cheese (freshly grated)
  • Fresh cilantro (chopped or parsley)

Instructions

  • Sear the chicken by seasoning and cooking in olive oil and butter until golden brown; set aside.
  • Sauté minced garlic, chipotle peppers, and adobo sauce until fragrant.
  • Add sun-dried tomatoes, chicken broth, and heavy cream; mix well.
  • Add tortellini and chicken back into skillet; simmer for 9–11 minutes until cooked through.
  • Stir in Parmesan cheese and garnish with cilantro before serving.

Notes

For gluten-free, use gluten-free tortellini.
Leftovers can be stored in the fridge for up to 3 days or in the freezer for 3 months.
If the sauce thickens too much, add a bit more chicken broth.
