- 1 pound boneless, skinless chicken breasts (or thighs)
- Salt and pepper (to taste)
- 1/4 teaspoon chili powder (optional)
- 2 tablespoons olive oil
- 1 tablespoon butter
- 3–4 cloves minced garlic
- 1–2 teaspoons adobo sauce
- ½ cup oil-packed sun-dried tomatoes (sliced)
- 2 cups low-sodium chicken broth
- 19 ounces cheese tortellini (refrigerated or frozen)
- 1 cup heavy cream
- ½ cup Parmesan cheese (freshly grated)
- Fresh cilantro (chopped or parsley)
Instructions
- Sear the chicken by seasoning and cooking in olive oil and butter until golden brown; set aside.
- Sauté minced garlic, chipotle peppers, and adobo sauce until fragrant.
- Add sun-dried tomatoes, chicken broth, and heavy cream; mix well.
- Add tortellini and chicken back into skillet; simmer for 9–11 minutes until cooked through.
- Stir in Parmesan cheese and garnish with cilantro before serving.
Notes
For gluten-free, use gluten-free tortellini.
Leftovers can be stored in the fridge for up to 3 days or in the freezer for 3 months.
If the sauce thickens too much, add a bit more chicken broth.
