Description

This Marry Me Pork Tenderloin features tender pork enveloped in a creamy tomato sauce, infused with sun-dried tomatoes and fresh basil, making it an ideal dish for gatherings.


Ingredients

  • 1 pound pork tenderloin
  • 1/2 teaspoon garlic powder
  • Salt & pepper
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 tablespoon flour
  • 4 cloves garlic (minced)
  • 1/2 cup dry white wine (or chicken broth)
  • 1 cup heavy/whipping cream
  • 1 tablespoon tomato paste
  • 1/3 cup sun-dried tomatoes
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 1/3 cup freshly grated parmesan cheese
  • 1 small handful fresh basil (chopped/torn)

Instructions

  • Trim and season the pork tenderloin; cut into 1-inch thick rounds and season with garlic powder, salt, and pepper.
  • In a skillet, heat butter and olive oil; sear the pork for 3-4 minutes on each side until golden brown.
  • Remove the pork and make the sauce in the same skillet by adding flour and garlic; stir briefly.
  • Pour in white wine, simmer until halved, then stir in cream, tomato paste, sun-dried tomatoes, oregano, and red pepper flakes.
  • Let the sauce thicken, then add parmesan and basil.
  • Combine the pork with sauce and serve immediately.

Notes

Sear the pork well for a nice crust and juicy meat.
Use freshly grated parmesan for a better texture in the sauce.
Leftover pork can be stored in an airtight container for 3-4 days.
