- 1 pound pork tenderloin
- 1/2 teaspoon garlic powder
- Salt & pepper
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 tablespoon flour
- 4 cloves garlic (minced)
- 1/2 cup dry white wine (or chicken broth)
- 1 cup heavy/whipping cream
- 1 tablespoon tomato paste
- 1/3 cup sun-dried tomatoes
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes
- 1/3 cup freshly grated parmesan cheese
- 1 small handful fresh basil (chopped/torn)
Instructions
- Trim and season the pork tenderloin; cut into 1-inch thick rounds and season with garlic powder, salt, and pepper.
- In a skillet, heat butter and olive oil; sear the pork for 3-4 minutes on each side until golden brown.
- Remove the pork and make the sauce in the same skillet by adding flour and garlic; stir briefly.
- Pour in white wine, simmer until halved, then stir in cream, tomato paste, sun-dried tomatoes, oregano, and red pepper flakes.
- Let the sauce thicken, then add parmesan and basil.
- Combine the pork with sauce and serve immediately.
Notes
Sear the pork well for a nice crust and juicy meat.
Use freshly grated parmesan for a better texture in the sauce.
Leftover pork can be stored in an airtight container for 3-4 days.
