- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- ½ cup bbq sauce
- ¼ cup honey
- 1 cup mixed vegetables (frozen or fresh)
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- salt and pepper to taste
Instructions
- Heat a large skillet over medium heat and sear the seasoned chicken for about 5 minutes on each side until browned.
- In a small bowl, mix together the BBQ sauce and honey; pour this over the chicken.
- Add the rice and chicken broth, stirring to combine everything well.
- Bring the mixture to a simmer, cover it, and cook on low for about 20 minutes until the rice is tender.
- In the last 5 minutes of cooking, place the mixed vegetables on top to steam.
- Allow the dish to sit for 5 minutes, then fluff the rice with a fork and serve.
Notes
For added heat, consider mixing in some hot sauce with the BBQ sauce.
You can substitute chicken thighs with breasts based on your preference.
