- 2 tablespoons olive oil
- 1 ½ pounds lean ground beef
- 2 teaspoons kosher salt, divided
- 2 cloves garlic, minced
- 1 medium yellow onion, finely diced
- 1 teaspoon smoked paprika
- ½ teaspoon freshly ground black pepper
- 1 ½ pounds yukon gold potatoes, chopped into ½ inch cubes
- 1 cup water
- 1 teaspoon yellow mustard
- 1 tablespoon worcestershire sauce
- 4 tablespoons ketchup
- 2 cups sharp cheddar cheese, grated
Instructions
- Preheat the oven to 375°F.
- In a large heavy-bottom, non-stick skillet over medium-high heat, heat 1 tablespoon of olive oil. Add the diced onion and ground beef. Season with 1 teaspoon salt, minced garlic, black pepper, and smoked paprika.
- Break the meat apart and cook for 5-8 minutes until browned and the onion is softened, stirring occasionally. Remove the meat and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and the chopped potatoes. Sprinkle with the remaining teaspoon of salt and cook for 1 minute until fragrant.
- Add ¼ cup of water to the potatoes, cover the skillet, and cook while stirring frequently until the potatoes are just tender, about 15-20 minutes, adding more water if they stick.
- Once the potatoes are tender, return the cooked meat to the skillet. Stir in the yellow mustard, Worcestershire sauce, and ketchup, adding more water if necessary.
- Sprinkle half of the grated cheese over the mixture and stir well. Top with the remaining cheese and transfer the skillet to the oven for 5 minutes or until the cheese melts. Serve warm.
Notes
You can skip preheating the oven if you’re not using it. Cook on the stovetop until the cheese is melted.
For added flavor, consider topping with green onions or your favorite hot sauce.
